This year one of our goals is to continue to eat healthy and cook more at home. One of our fav things to eat and make is our simple ‘Twinship Kale Salad’ with lemon pepper dressing! Our ‘Twinship Kale Salad’ salad is part of our Triple A Rules:1) Affordable 2) Accessible and 3) Attainable. We purchased most of these ingredients from Whole Foods and Trader Joe’s and used what we had in our pantry and fridge… at last our kale salad was born!
Just an FYI — kale is amazing for so many reasons! It’s high in Vitamin K and can help protect against various cancer. Kale has more iron than beef and kale is high in Vitamin A which is great for your vision, your skin and your hair! Read more here.

Ingredients:
- Baby Kale
- unsalted pine nuts
- dried cranberries
- red onions (finely chopped)
- Tomato & Basil Feta Cheese (if you don’t like feta cheese, you can take it out and make it your own.)
- combine all ingredients in a bowl
Lemon Pepper Dressing:
- 1/2 lemon (juiced)
- 3 table spoons of Bobcat Ridge Olive Oil (any olive oil works– we just prefer this olive oil because it’s local and we actually picked the olives for this bottle!)
- salt & pepper for taste

Oh its super nice and adds an earthy, smokey flavor. You can also just pan fry them.. just toss em in a frying pan for a few minutes and their natural oils do the rest.
